Homemade Vodka Sauce

I don’t know about you, but the only vodka I like is in my pasta sauce. One of my favorite meals I’ve ever had is the Carbone Spicy Rigatoni with vodka sauce. You can find my copycat recipe for that here. This is it’s much more reserved, but just as delicious cousin.

Ingredients

  • A box of pasta
  • Olive oil
  • 1 shallot, diced
  • 6 cloves of garlic, minced
  • 4 tablespoons of tomato paste
  • 1 tablespoon of vodka
  • 1 cup of heavy cream
  • 2 tablespoons of butter
  • Salt, pepper, & red pepper flakes to taste
  • 1 cup of pasta water

Instructions

Heat olive oil over medium heat. Add shallots and garlic and cook until fragrant. Add tomato paste and mix with garlic and onion. Boil and salt water for pasta.

Continue to cook the tomato paste until it’s a deep red color. Add red pepper flakes to taste and vodka and mix until burnt off. Turn heat on low while pasta finishes cooking. Make sure to save some pasta water!

Turn heat to medium and slowly add heavy cream and whisk. Add butter and pasta water to keep the sauce from getting too thick. Once the pasta is done, add directly to the pan. It’s fine to have some pasta water get into the sauce.

Let the pasta finish cooking by simmering in the vodka sauce on medium low. Serve and add burrata with a splash of olive oil, salt and pepper. ENJOY!
