White Wine Parmesan Cream Sauce

I remember cooking this recipe almost exactly one year ago, right at the start of quarantine. Paul and I had just moved into our new house, we both were working from home and to be completely honest, we were going a little stir crazy spending day in and day out together. Enter: Quarantine Kitchen, a nightly stream of Instagram stories which featured a new recipe each night (along with a ton of wine drinking!).

As the days went on, I discovered my love for trying new recipes and cooking. I was excited everyday to shop for new ingredients (via Shipt of course, I wasn’t leaving the house!) and try new recipes seeking inspiration from Pinterest, chefs, and drool worthy Instagram posts. I hope you enjoy this as much as we did!

Ingredients

  • 4 chicken thighs
  • 1/2 cup of flour
  • 1 tablespoon of garlic powder
  • 1 tablespoon of Italian seasoning
  • Olive oil
  • 4 tablespoons of butter
  • 1 small yellow onion, diced
  • 5 garlic cloves, minced
  • 2 small tomatoes or 1 large tomato, diced
  • 1 cup of heavy cream
  • 1/2 cup of white wine (you can use chicken broth as an alternative!)
  • 1/2 cup of parmesan cheese, shredded
  • Red pepper flakes, to taste
  • Salt & paper, to taste
  • Your choice of pasta!

Instructions

Toss the chicken in 1/2 cup of flour, 1 tablespoon of garlic powder, 1 tablespoon of Italian seasoning 2 tablespoons of salt and 1 teaspoon of pepper.Cook the chicken over medium high heat for about 5 minutes on each side. Put in the oven at 420* for approximately 15 minutes or until cooked through. Set aside.

Heat butter over medium heat. Add onions & garlic and saute until it smells like heaven on earth in your house. Add tomatoes and 1 tablespoon of flour and whisk together. Add heavy cream, wine, Italian seasoning, salt, and red pepper flakes. Bring to a simmer and then add parmesan cheese.

Start your water for the pasta and make sure you salt it! Save some pasta water for the sauce if it gets too thick.

After the cheese has melted add the chicken thighs and simmer on low until the pasta is ready. Make sure you add all the chicken juices to the pan, it only makes it taste better!

Add your pasta when it is al dente and let it finish cooking in the sauce. ENJOY!
