I recently started watching Stanley Tucci’s Searching For Italy and have never been so obsessed with a show! If you haven’t watched it, drop everything and watch it now. I became so inspired to recreate some incredible dishes that were showcased from different regions of Italy. First on the list? Spaghetti alla Nerano.
It’s an incredibly simple recipe comprised of zucchini, pasta, pasta water, and cheese – and in my case I added some butter and garlic (because no good recipe excludes butter and garlic in my opinion). It was light, creamy and full of zucchini flavor. I still think that red based sauces are my favorite, but this was a great recipe to “change it up”. Enjoy!

Ingredients
- 4-5 small zucchini, thinly sliced
- 5 cloves of garlic
- 4 tablespoons of butter
- Pasta of your choice
- EVOO
- Parmesan cheese (as much as you want – I did about 3/4 a cup 🙂 )
- Reserve some pasta water
- Salt & pepper to taste
Directions
Fry the zucchini over medium heat and set aside once browned. Save 1/4 of the fried zucchini to blend with salt, pepper and a splash of pasta water. Heat butter over medium heat and add garlic. Cook for 30 seconds or until fragrant. Add zucchini to pan to cook in the garlic. Add pasta directly to the pan once al dente. Add blended zucchini mixture, a splash of pasta water and mix together. Top with parmesan cheese and a final splash of pasta water and mix until creamy. Enjoy!
