Happy Halloween all!! The past few days have been high 60’s/low 70’s in Florida so I guess you could say Florida fall has officially arrived. With that said, nothing makes me crave soup more than some cool(ish) weather. I love love love French onion soup, so I decided to play around and created this one pot French onion pasta dish! Recipe can be found below. ENJOY!

Ingredients
- 1 box of pasta of your choice, I think rigatoni or a#round noodle would work best vs. a spaghetti/linguine type pasta
- 4 tablespoons of butter
- 3 to 4 large onions, sliced
- 6 cups of chicken stock/broth
- 1 tablespoon of corn starch, mixed with 1/4 cup of water
- 1 cup of gruyere cheese, shredded
- Salt & pepper to taste
Begin by melting the butter over medium low heat. Add onions and caramelize. Make sure to stir the onions often so they are cooked evenly. Once the onions are caramelized, add chicken stock/broth (I used stock because I think it has more flavor but you can use either!) and pasta. If the chicken stock doesn’t cover the pasta, add a cup or two or water. Bring to a boil and cook covered until pasta is al dente.
Once pasta is cooked then heat to medium low and add cornstarch/water mixture which will thicken the sauce and make it less soupy. Add gruyere cheese and season with salt and pepper. Serve & top with extra cheese – enjoy!!
