Aren’t you *or-zoooo* glad you have an easy one pot meal to make for dinner tonight?

Part 2 of my easy weeknight dinner series is one of my favorite one pot meals!! This creamy chicken Florentine orzo is minimal mess & ingredients and is ready in just over 30 minutes.

-chicken thighs, boneless
-2 cups of orzo
-3 TB of butter
-4 garlic cloves, minced
-1 shallot, diced
-Chicken broth (see instructions, depending on how fast your orzo cooks you can use more or less! I started with 3 cups and had to add more)
-1/3 cup of heavy cream
-parmesan to top
-salt and pepper to taste
-Florentine seasoning (I bought mine from @mercierorchardsbut if you don’t have any on hand, season with oregano/Italian seasoning, garlic powder, and onion powder.
Heat EVOO over medium high heat. Add the chicken breasts and season with salt, pepper & spice blend on each side. Cook each side for approximately 5 minutes or until golden. Remove and set on a plate.
Add butter, shallots, and garlic to the same pan over medium heat. Scrape the bottom of the pan to get the brown bits up (the best part 🙂 ). Add orzo to the pan and just cover the orzo with chicken broth. Add chicken and juices back to the pan and bring to a simmer. Once simmering, cover and cook for 10-12 minutes over medium low heat.
After 10-12 minutes, check the orzo and stir. Add more chicken broth if the orzo still isn’t done (mine wasn’t!) and cover again. Once orzo is cooked, add heavy cream and mix. Remove from heat, add parmesan & ENJOY!
