Broccoli cheddar soup, meet my 6 ingredient Mac & cheese. Introducing my creamy broccoli cheddar pasta (with white cheddar!). This dish is so creamy, but lighter than your normal Mac & cheese and of course with added broccoli so you’ve got your daily dose of veggies. Everett has made the switch to real food and we’ve been trying to come up with a variety in our meals we serve him. This dish can be ready in 15-20 minutes and is a perfect meal for yourself or kids!

Ingredients
- 1/2 box of pasta
- 4 tablespoons of butter
- 3 garlic cloves, freshly grated
- 2 cups of chicken broth
- 1.5 cups of white cheddar
- 1/2 cup of milk
- 1/2 cup of heavy cream
- 2 cups of broccoli
- 1/4 cup of flour
Directions
Heat butter over medium heat. Once butter is melted, add garlic and stir until fragrant. Add flour and whisk. Pour two cups of chicken broth and mix. Bring to a boil, then turn down to medium low and add milk and heavy cream. Add white cheddar and mix in to melt. Season with salt and pepper to taste.
Once the sauce thickens, add broccoli and let cook for 5-10 minutes over medium low. Once pasta is al dente, add to sauce with salt and pepper to top.
